Some might have already lost track of their New Year resolution to “live healthier” in 2025, but there is still more than enough time to get back on track for Spring Break and a swimsuit body for summer. Clanton resident and native Jessie Arrington Pemberton centers her life on health and wellness and dedicates her life to helping others achieve their health goals.

In 2021, Pemberton became a certified personal trainer and nutrition coach with the National Academy of Sports Medicine.

“I started out wanting to live a healthier life for me and my boys,” said Pemberton. “I reached all of my personal fitness goals and want to help other people reach theirs.”

During the COVID-19 pandemic when the world was encouraged to “stay home and isolate,” Pemberton launched “Fitness For You” with online personal training videos. Subscribers are able to download a fitness app and select work out videos specific to the area of the body they want to work on. Pemberton motivates users during the video by showing them the physical form and how many reps they need to complete.

In January 2023, Pemberton and business partner Lindsay Miller launched a new company alongside Pemberton’s personal training and opened Peachy Meal Prep. Each week Peachy Meal Prep creates a healthy and delicious menu for individuals and families that want to eat healthier but do not necessarily have the time to prepare food. Items listed on the wide-range menu include ready-made meals such as buffalo chicken stuffed sweet potatoes, Mississippi chicken, chicken salad and bulk items such as shredded chicken and parmesan roasted broccoli and carrots to help supplement throughout the week.

All food is pre-ordered a week in advance and food is ready for pick up at the preferred location the following Monday.

Since Peachy Meal Prep initially kicked off, Pemberton has expanded and her meals are available for pick up at 27 locations across Alabama from Hayden to Auburn. Five of the Peachy Meal Plan pick-up locations are in Chilton County and include — Anytime Fitness and C2 PER-FECT Sports Training Complex in Jemison, B U Fitness in Thorsby and the YMCA of Chilton County and Express Fitness in Clanton.

Since October 2024, Pemberton has run Peachy Meal Prep solo with the help of her brother Allen Arrington and many dedicated delivery drivers. Each week they prepare up to 400 meals.

“Peachy Meal Prep specializes in crafting fresh, delicious and convenient meals that help you stay on track with your health and fitness goals,” said Pemberton. “Whether you are juggling a busy schedule, focusing on weight management or simply wanting to eat better, we are here to make it easy for you. We believe that eating well does not have to be complicated or time-consuming — It should be enjoyable, accessible and a source of energy for the life you love.”

In addition to being a personal trainer and owning Peachy Meal Prep, Pemberton also gives personal consultations through nutrition coaching. She and the individual set personal goals, create a plan and break down their food macros through education about fats, proteins, and carbohydrates.

“We all start out somewhere,” said Pemberton. “Your health goals are not going to happen overnight. Start out small. Don’t get overwhelmed and reach out to people that can help you.”
